SAUSAGE WITH PEPPERS AND ONIONS

Ingredients:

4 Italian sausage links (sweet or hot, your choice)
2 large onions, sliced
3 large bell peppers (any color), sliced
4 garlic cloves, minced
2 tbsp olive oil
Salt and pepper to taste
Optional: 1/4 cup white wine, 1/4 cup chicken broth
Instructions:
Heat olive oil in a large skillet over medium-high. Add sausage links and cook until browned on all sides (about 5-7 minutes). Remove sausage from skillet.
Add sliced onions to skillet and cook until they’re translucent and starting to caramelize (about 5-7 minutes). Add bell peppers and cook until they’re tender (about 5 minutes more).
Add garlic to skillet and cook for 1 minute.
Return sausage to skillet. If using wine and broth, add them to skillet. Simmer everything together for 10-15 minutes, letting flavors meld.
Season with salt and pepper to taste. Serve hot, perhaps with crusty bread or over rice.
