Ingredients
1 pound shrimp, peeled and deveined
4 cups fresh spinach, washed
2 tablespoons olive oil
3 cloves garlic, minced
Salt and pepper to taste
Juice of 1 lemon
Directions
- Warm the olive oil in a large skillet over medium heat.
- Add the minced garlic and let it gently sauté for about a minute, just until it fills your kitchen with that wonderful aroma.
- Toss in the shrimp and cook for 2 to 3 minutes, stirring occasionally, until the shrimp turn a lovely pink.
- Add the fresh spinach to the pan and cook for about 2 minutes, just until it wilts down and mixes with the shrimp.
- Season everything with salt, pepper, and a good squeeze of fresh lemon juice. Give it all a quick stir, and serve right away while it’s warm and flavorful.
