Fruity Pebbles Cookie Cheesecake Bars

Ingredients:

  1. 1 16 oz package sugar cookie dough
  2. 1 cup Fruity Pebbles cereal, divided
  3. 8 oz cream cheese, softened
  4. 1/2 cup granulated sugar
  5. 1 large egg
  6. 1 teaspoon vanilla extract

Directions:

  1. Mix the dough base:
  • In a mixing bowl, combine the sugar cookie dough with 1/2 cup of Fruity Pebbles cereal. Mix until evenly combined.
  1. Form the crust:
  • Press two-thirds of the cookie dough mixture into the bottom of a greased 8×8-inch baking pan to create an even layer.
  1. Make the cheesecake layer:
  • In a separate bowl, beat together the cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.
  1. Pour the cheesecake filling evenly over the cookie crust.
  2. Top it off:
  • Crumble the remaining cookie dough over the cheesecake layer.
  • Sprinkle the remaining 1/2 cup of Fruity Pebbles evenly across the top.
  1. Bake the bars:
  • Preheat the oven to 350°F (175°C).
  • Bake for 25 to 30 minutes, or until the edges are golden and the center is set.
  1. Cool and chill:
  • Allow the bars to cool completely, then refrigerate for at least 1 hour before slicing to help them set properly.
