PEACH CHEESECAKE

INGREDIENTS
2 cups crushed Marias vanilla wafers
2 tablespoons melted butter
600g cream cheese
3/4 cup sugar
1 tablespoon vanilla extract
1 packet unflavored gelatin, dissolved in
2 tablespoons water
3/4 large can NESTLÉ® Heavy Cream
1 jar peaches

PREPARATION
Serves 12
Crush the wafers and mix with the melted butter. In a greased springform pan or round baking dish, place the wafers, pressing down the bottom. Refrigerate while you prepare the filling.

Mix the cream cheese and 3/4 cup sugar, then the cream cheese and 1 tablespoon vanilla extract.

Dissolve the gelatin in 2 tablespoons water and microwave for 30 seconds, until softened; stir into the cream.

Mix the cheese and cream together and pour over the biscuit. Refrigerate for at least 2 hours.

When the cheesecake has set, top with the sliced peaches and serve.
