Million Dollar Chicken Casserole


Ingredients:
3 cups cooked chicken, shredded or diced
1 can condensed cream of chicken soup, (10.5 oz can)
1 cup sour cream
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 sleeve Ritz crackers, crushed
1/4 cup unsalted butter, melted
5-6 slices of bacon
1 tsp Salt
1/8 tsp pepper
Chopped chives, garnish

Instructions:

Preheat your oven to 350°F . Grease a 9×13 inch baking dish.

In a large mixing bowl, combine the chicken, cream of chicken soup, sour cream, mayonnaise, cheddar, mozzarella, and crumbled bacon. Season with salt and pepper then mix until creamy and well blended.

Next, spread the chicken mixture evenly into the prepared baking dish.

In a separate bowl, mix the crushed Ritz crackers with melted butter until coated. Sprinkle the cracker mixture evenly over the top of the casserole.

Bake uncovered for 25-30 minutes, or until bubbly and golden.

Bake the bacon strips on 375 degrees for 20 minutes or until well done and golden brown.

Remove the casserole from the oven and garnish with crumbled bacon and sliced chives.
