6 large eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon Cajun seasoning
1/4 cup cooked shrimp, diced
2 tablespoons green onions, chopped
Salt and pepper to taste

Directions
- Start by hard boiling the eggs. Once they’re done, let them cool completely, then gently peel off the shells. Slice each egg in half lengthwise.
- Carefully pop out the yolks and put them in a mixing bowl. Mash the yolks together with mayonnaise, Dijon mustard, Cajun seasoning, and a bit of salt and pepper until everything is smooth.
- Stir in the diced shrimp and chopped green onions, making sure they’re nicely incorporated into your creamy mixture.
- Spoon or pipe the filling back into the egg whites, making sure each little egg boat is generously filled.
