Cajun Shrimp Deviled Eggs

Ingredients
6 large eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon Cajun seasoning
1/4 cup cooked shrimp, diced
2 tablespoons green onions, chopped
Salt and pepper to taste
Paprika for garnish

Directions

  1. Start by hard boiling the eggs. Once they’re done, let them cool completely, then gently peel off the shells. Slice each egg in half lengthwise.
  2. Carefully pop out the yolks and put them in a mixing bowl. Mash the yolks together with mayonnaise, Dijon mustard, Cajun seasoning, and a bit of salt and pepper until everything is smooth.
  3. Stir in the diced shrimp and chopped green onions, making sure they’re nicely incorporated into your creamy mixture.
  4. Spoon or pipe the filling back into the egg whites, making sure each little egg boat is generously filled.
