Ingredients:
1 large cucumber, sliced
2 medium tomatoes, sliced
1 small red onion, thinly sliced
Dressing:
3 tablespoons olive oil
2 tablespoons red wine vinegar (or fresh lemon juice)
½ teaspoon parsley
Salt and black pepper, to taste
½ teaspoon crushed red pepper flakes (optional)
Start by slicing the cucumber, tomato, and onion. For best texture, use firm, ripe tomatoes and an cucumber.
In a small bowl, whisk together the olive oil, red wine vinegar, parsley, red pepper flakes, salt, and black pepper. Mix until well combined.
In a large bowl, gently toss the cucumber, tomatoes, and onions with the dressing until everything is evenly coated.
Cover and refrigerate for at least 20-30 minutes. This allows the vegetables to soak up the flavor. If you have time, marinate for up to 2 hours for even better results.
