⭐️ Ingredients
Salad:
1 can (400 g) black beans, drained and rinsed
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
1–2 ripe avocados, diced
1 cup cooked corn (fresh, frozen, or canned)
Optional garnish: Fresh chopped cilantro or parsley
Herbed Vinaigrette:
3 tbsp olive oil
2 tbsp red wine vinegar (or lemon juice)
1 tsp Dijon mustard
1 garlic clove, minced
1 tbsp finely chopped fresh herbs (parsley, cilantro, oregano, or mix)
Salt & black pepper to taste
Instructions
1️⃣ Make the Dressing
In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, and chopped herbs.
Season with salt and black pepper.
Shake or stir well until fully combined.
2️⃣ Prepare the Salad
In a large bowl, add drained black beans.
Add cherry tomato halves, thinly sliced red onion, cooked corn, and diced avocado.
Gently toss to combine without smashing the avocado.
3️⃣ Dress the Salad
Pour the herbed vinaigrette over the salad.
Toss gently until all ingredients are coated.
4️⃣ Garnish and Serve
Top with fresh cilantro or parsley if desired.
Serve immediately for best texture and color.
