Directions:
- Mix the dough base:
- In a mixing bowl, combine the sugar cookie dough with 1/2 cup of Fruity Pebbles cereal. Mix until evenly combined.
- Form the crust:
- Press two-thirds of the cookie dough mixture into the bottom of a greased 8×8-inch baking pan to create an even layer.
- Make the cheesecake layer:
- In a separate bowl, beat together the cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.
- Pour the cheesecake filling evenly over the cookie crust.
- Top it off:
- Crumble the remaining cookie dough over the cheesecake layer.
- Sprinkle the remaining 1/2 cup of Fruity Pebbles evenly across the top.
- Bake the bars:
- Preheat the oven to 350°F (175°C).
- Bake for 25 to 30 minutes, or until the edges are golden and the center is set.
- Cool and chill:
- Allow the bars to cool completely, then refrigerate for at least 1 hour before slicing to help them set properly.
