Chicken Zucchini & Fresh Corn Burgers

Ingredients:

1 lb ground chicken

1 medium zucchini, coarsely chopped or grated

Kernels from 1 ear of fresh corn

1/2 medium red bell pepper, finely diced

2 cloves garlic, minced (optional)

1 egg

1/4 cup breadcrumbs (or more if needed for binding)

Salt and pepper to taste

Optional: 1/2 tsp cumin or smoked paprika for extra flavor

Olive oil for cooking


Instructions:

  1. Prep the Veggies:

If the zucchini is very watery, squeeze out excess moisture using a clean kitchen towel or cheesecloth after grating.

You can pulse the chopped zucchini in a food processor briefly if preferred.

  1. Mix the Patties:
    In a large bowl, combine ground chicken, zucchini, corn, red bell pepper, garlic, egg, breadcrumbs, and seasoning. Mix gently until just combined.
  2. Form Patties:
    Divide the mixture into 4 equal parts and shape into burger patties. If the mixture is too loose, add a bit more breadcrumbs.
  3. Cook the Burgers:
    Heat a little oil in a skillet over medium heat. Cook patties for about 5–6 minutes per side, or until golden brown and cooked through (internal temp 165°F / 74°C).
  4. Serve:
    On burger buns, lettuce wraps, or over a salad. Great with avocado, a dollop of Greek yogurt, or a zesty aioli.
