Spinach Artichoke Grilled Cheese Sandwiches

Ingredients:
8 slices bread (sourdough or your choice)

1 cup fresh spinach, chopped

½ cup canned artichoke hearts, drained and chopped

½ cup cream cheese, softened

1 cup shredded mozzarella cheese

2 cloves garlic, minced

2 tbsp butter, softened

Salt & black pepper, to taste

Directions:
In a bowl, combine cream cheese, spinach, artichokes, garlic, salt, and pepper. Mix well.

Spread butter on one side of each bread slice.

On the unbuttered side, spread the spinach-artichoke mixture evenly on 4 slices. Sprinkle shredded mozzarella over the mixture. Top with the remaining bread slices, buttered side out.

Heat a skillet over medium heat. Grill sandwiches 3–4 minutes per side or until bread is golden brown and cheese is melted.

Remove from skillet, slice, and serve warm.
