Ingredients:
Ripe bananas – 3 medium (about 1½ cups / 360g mashed)
All-purpose flour – 2 cups (250g)
Unsalted butter – 1 cup (226g), softened
Granulated sugar – 1 cup (200g)
Brown sugar – ½ cup (100g)
Eggs – 3 large
Whole milk – ½ cup (120ml)
Baking powder – 2 tsp
Baking soda – ½ tsp
Salt – ¼ tsp
Vanilla extract – 2 tsp
Optional: Chopped walnuts or pecans – ½ cup (60g)
Instructions:
Preheat your oven to 175°C (350°F) and grease a 9-inch round pan line with parchment paper.
Cream the softened butter with the granulated and brown sugars until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas until fully combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the banana mixture, alternating with the milk. Mix until smooth and no dry streaks remain. If using nuts, fold them in last.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
