King Crab Quesadillas

Ingredients

2 cups cooked king crab meat
1 cup shredded cheese (cheddar or Monterey Jack)
4 large flour tortillas
1/4 cup diced red onion
1/4 cup chopped cilantro
1 teaspoon lime juice
Salt and pepper to taste
Butter or oil for cooking

Directions

  1. In a mixing bowl, gently combine the king crab meat, shredded cheese, diced red onion, chopped cilantro, lime juice, and just enough salt and pepper to season everything nicely.
  2. Warm up a skillet over medium heat and melt a little butter or drizzle in some oil.
  3. Place a tortilla flat in the skillet and spread a generous amount of the crab filling over one half of the tortilla.
  4. Fold the tortilla over to cover the filling and let it cook for about 2 to 3 minutes, or until the bottom is beautifully golden and the cheese is starting to melt.
  5. Carefully flip your quesadilla and cook the other side until it’s golden brown and crispy.
  6. Repeat with the remaining tortillas and filling, adding more butter or oil to the pan as needed.
  7. Cut the quesadillas into wedges and serve them warm.
