Ingredients
2 cups cooked king crab meat
1 cup shredded cheese (cheddar or Monterey Jack)
4 large flour tortillas
1/4 cup diced red onion
1/4 cup chopped cilantro
1 teaspoon lime juice
Salt and pepper to taste
Butter or oil for cooking
Directions
- In a mixing bowl, gently combine the king crab meat, shredded cheese, diced red onion, chopped cilantro, lime juice, and just enough salt and pepper to season everything nicely.
- Warm up a skillet over medium heat and melt a little butter or drizzle in some oil.
- Place a tortilla flat in the skillet and spread a generous amount of the crab filling over one half of the tortilla.
- Fold the tortilla over to cover the filling and let it cook for about 2 to 3 minutes, or until the bottom is beautifully golden and the cheese is starting to melt.
- Carefully flip your quesadilla and cook the other side until it’s golden brown and crispy.
- Repeat with the remaining tortillas and filling, adding more butter or oil to the pan as needed.
- Cut the quesadillas into wedges and serve them warm.
